cones need to be grown,
this
usually takes one to one and a half years. When they are fully grown, either a specifically designed machine harvests them or it is done by hand – each
sugar
cone is cut with a blade slightly above the ground. The collected

cones are
then
crushed using a special wheel-powered machine, which produces a juice, which is purified by employing a limestone filter. Applying heat to the filtered juice, in an evaporator, removes liquidity and transforms it into syrup. Which is put into a centrifuge that can disentangle
sugar
crystals from the syrup. In the
last
step, the
sugar
is dried and cooled in a special barrel.
